My email box is inundated with news about all the new truffle dishes that are being served around the country since truffle season opened a few weeks ago. Many of those stories mention the mandolin as an essential tool for shaving those truffles to a fine flake. The one that I see most often in fine restaurants is the Benriner Japanese Mandolin Slicer. This one comes a safety guard, adjustable cutting thickness, and three removable julienne blades that move along a 2 1/2″W cutting channel. While you can use this tool to slice just about any vegetable, I’d never use it for anything once I sliced a truffle on it. I’d just sit around and sniff the board once the truffle was gone…
